Fungal alpha-amylase product application note
The fungal alpha-amylase is produced by fermentation of Aspergillus oryzae. It hydrolyzes the 1,4-α-glycosidic linkages of amylose and amylopectin to produce dextrin and maltose, and arbitrarily cuts short-chain dextrin and a small amount of low-molecular saccharides. For both amylose and amylopectin, they are decomposed in a random form, thereby reducing the viscosity of the starch dextrin.
